Hate is a strong word.

1. There are certain things added to the meat layer which needs a little cooking. For example: fried onions, some add sliced tomato. The taste, color, smell. and texture changes once it is done properly. Mixing already cooked meat and polao doesn't equate to biryani.

2. Only cheap people get the ratio wrong. It is always has been 2:1 (Meat:rice). There are special ways of cutting the meat pieces to begin with. Western Grocery stores does a dis-service when they use saw machine the cut the meat up before we buy them.

I love that egg in Biriyani, rarely it will feel like outside the main dish. Also having an egg gives you the alternate choice to cut the boredom. But I am cutting on the yellow part. Only egg white.

A Dhaka restaurant biryani signature is a half boiled egg.

I was impressed even Dhaka Biryani in East London keeps this tradition alive.

There was a myth for not having the yellow part of the eggs for those who have high cholesterol from the 60s to the 00's. It is simply a MYTH. Definitely egg contains high cholesterol but that no effect in our body. Our liver naturally produces cholesterol. So if one eats food with high cholesterol our liver simply reduces the production (automatically). For nearing 50 (age) people, 2/3 eggs a week is good and not excessive. Well for Rifat et. al.

This was not from a medical practitioner, instead from someone who directly works with people to improve their health. It was my trainer in Nashville. It was 2007. He also suggested replacing white rice with brown rice, cut down red meat, no Taco Bell etc. Altogether those worked.

TE is right, it is considered as myth.

Small anecdote:

Once my wife's young nephew came to my inlaws for dinner. There was a grand spread of traditional Bangladeshi items to eat with rice. Fella was disappointed and complained to my Mother in Law: Dawat disso, to biryani koro nai kenno? You have invited us to a party so why havent you cooked biryani

The fella is now in Uni and everytime I see him, i remind him of this

One of the best delights in my culinary life in Bangladesh is a full on wedding kachi biryani.

You are first given a small plate of sides: a small round beef kebab, a piece of roast chicken, some slices of cucumber, carrots and buffalo full fat cheese.

Then the kachi itself where the meat is reddish, the rice is gorgeous mixed with a dance of white and yellow, and ofcourse the potato which looks regal in this orange color.

And ofcourse glass of borhani with a nice salty and spicy having a tinge of sweetness to balance the flavours.

To finish it off, the jorda pilaf which itself is as crisply cooked as the kachi decorated with pineapple, yoghurt and small balls of delightful gulab jamuns on top.

I would say close to 1,500. It is not a healthy meal for sure. But it is soooo good.

I have recently purchased Instant Pot and have to say that it is my best kitchen buy so far. Very easy to make almost perfect biryani.

I am surprised that Dhaka/Bangladesh biryani doesn't get a lot of recognition. If you go to Ind/Pak groceries/restaurants, all you hear and see packets of are sindhi, hyderabadi, Karachi, afghani and other type of biryani/polaus. I have tried almost all and our biryanis (haji, nanna, rajjak), kacchi, tehari are almost as good, if not better. We just suck at promoting our cuisines.

In the UK BD people have for so many years promoted Indian food and not our own cuisine.

A restaurant like Dhaka Biryani, which sells really good and cheap food is not appealing. Its dirty and uninviting, like a typical local resto you would see in the sub continent. Although I would always see one or two white customers eating inside everytime I made a visit.

Also Sylethis in UK have stolen the kachhi label and plastered it on regular lamb/mutton biryani.

But I agree with you that Bangladeshi rich foods are quite unique. Quite a few Indian food bloggers have actually highlighted how good our restaurant food is.

My brother in law has some intentions to open a proper Bangladeshi restaurant but let's see
