Just finished the latest Prince of Persia (on 360)... vastly different from both original and the previous generation of PoP games (and has no relation to their stories). The game is kind of easy... and entirely about platforming and boss fights (minion fights are rare and can be easily avoided or finished). The best thing about the game is the artwork... incredibly beautiful worlds. However, the ending kind of made the entire game pointless... if you want spoilers, watch the ending here:
One of my problem is that i get excited for few days and then loose interest in all the systems and games i have ever bought.
I had nintendo64 and ps systems and their popular games
now i have
nintendo ds,ps2,psp and ps3 systems
right now i love playing "little big planet" but Tekken has been all time favorite for me.

The favorite video games I've experienced so far (and I'm no expert) are as follows:
1. "Golden Eye" in Nintendo64, a game that was way ahead of competition in capturing the thrill of FPS games in console as well as the Bond experience.
2. "Gran Turismo 2" in Playstation, the first close to real life Driving Simulator game I played. I think it's the most sold game in PS1 platform. With later editions they have taken this beyond just a video game experience but this particular version was amazing for a 256KB memory card and Playstation One hardware. I still play it in PS2 sometimes.
3. "Ace Combat 5" - The unsung war in PS2. NAMCO took flight simulation to a whole new experience with this one and the storyline was very engaging. My son plays Ace Combat 6 in XBox 360 now but I think this one was t best of the series so far.
Notable mention are - Crash Bandicoot series, Gran Turismo 4, Lord Of The Rings (Fellowship of the ring), Ace Combat 4, Secret Weapons over Normandy.

Kind of late response but.....
For NFS I just need a big screen. I can't really enjoy it without the nice graphics on a big screen. Add some home theatre sytems and I'm set.:0
Talking about NFS, I really like the NFS Undercover. I gotta say they did a great job with the story and the graphics!!

I am not that into video games. But from my local target, i bought this pc game called Safecracker for just 10 bucks. Tell you what...not bad for the money... And pret-ty stimulating.
Assassin's Creed bored me... it wasn't too challenging. Finished it in one night. Story was okay, I guess... but not sure I'll get the sequel, despite the huge cliffhanger.
EDIT: Just would like to add that the new Prince of Persia uses the same engine as Assassin's Creed, and it was an extremely easy game too... perhaps this "free-roaming" world idea is not that great for gamers expecting a challenge.
looking back Metal Gear Solid and Resident Evil 2 were way ahead of there time and MGS4 was one of the greatest games i've ever played, one of those games were I finished it in 36 hrs (sleep included).
