Pui shaak? My favorite too. Great with chingri. I also like kachur loti for the same texture profile.
I used to get pui shaak from the Vietnamese grocery store when I was in San Diego.

My mom was talking about Bengal Meats last I talked to her on the phone. Looks like that's where I'm going day 1 to make some pan-fried steaks. Can you get rib-eye there?

Made myself aged sirloin steak, seasoned with cracked black pepper, sea salt and Chinese star anise, cooked medium rare, and glazed with sweetened rice vinegar with freshly grated lime zest. Side of day-old boneless beef bhuna fried rice (Kataribhog) with added onions, carrots, tomatoes, potatoes, garlic, fish sauce, butter and cilantro.

No but they'll cut it for you from uncut sections in the freezer as long as it has been aged for at least a month. I've seasoned and am re-aging about 6 sirloin steaks for you to take home and cook BTW

You're a good man. You'll just now have to make a trip out to where I am and let me treat you to the island specialties - I know the best places for chicken rice, laksa, pepper and chili crab, roti prata etc.
