Most of my peers delved into cafeteria and fast food their first semester in the States. By the second semester though, they'd all gotten homesick for genuine Bengali food, and had had their mothers mail them Siddiqua Kabir's cookbook.

Shaad bhai, i do know how to cook but special bengali recipe like 'Murighonto', 'khasir rejala', 'shorshe bata ilish', ;Taki macher bhorta, potoler chilka bhorta, etc do require some expertise and time.
Another thing, there are not many bengali shops around where i live and very few of them have such ingredients. So, iccha thakleo upaye nai
BTW, thanks Zunaid bhai and Shaad bhai for giving me some 'dhatani'. Those should not be any excuses to avoid cooking. I will download 'Bengali recipes' and will start experimenting. On every weekend, there will be a new bengali dish for me ! Apnader doa pratthi !!!

BTW, often the local Chinese supermarket will stock a number of "our" ingredients if there are no nearby Bengali/Indian stores.

I have a copy of that book, but never used it. I just did not like her calling everyone তুমি. She might have been an অধ্যাপিকা, but many nani/dadis also used the book. Now that she is much older, তুমি would not have been so unpalatable.

Oh desserts! I can no longer eat that much, but during my youth, I have eaten 1kg doi and 1kg rajbhog together quite a few times. I was known for my "soru pete goru ate" capability!

if my Dadi picks up that book, she is a student, learning.
And tumi is a much more friendly address than Apni .... no wonder such word (Apni) dont even exist in many languages. Coz respect is not in tumi/apni..some where else, if we only knew that. These days even children call their parents and grand parents tumi... whats the big fuss with that ???

You might be okay with another 30-year younger Bangladeshi whom you don't know calling you tumi. I am not. (BTW, calling parents/grandparents tumi is common, but the author is not a relative of most of her readers.)

oo achcha, I do like kacha peyaj, but avoid achar or lebu as they often change the taste of the curry, otherwise lebu with daal is good.

I'll have a crack at it. As Zunaid asked, these are 10 recipes that I think every Bangladeshi should know. Obviously, one should know many more; but I think one tends to encounter versions of these in most Bengali households during lunch or dinner. And yes, I've cheated somewhat -- in merging dishes where knowing how to prepare one variety means you know how to prepare others.
- Bhaat (I know, I know; but I've come across Bangladeshi boys here in the States who don't know how to prepare rice -- they use Uncle Ben's.) and its derivatives: khichuri, biryani, pullao, etc.
- Shaak/Shaag -- lal, paalong, data, etc.
- Bhortas -- starting at the very least, with alu, and progressing to say, begun, taki machh, chingri machh, etc.
- Some form of vegetable bhaja -- begun, potol, etc.
- Some form of vegetable bhaji -- alu, lau, kodu, etc.
- Some form of machh bhaja -- ilish, koi, rui, rupchanda, etc.
- Some form of machher jhol -- papta, pangash, magur, shing, etc.
- Some form of meat (murgi, khashi, gorur mangsho) curry -- kalia, korma, rezala, with narikel, with daal, etc.
- Keema
- Daal -- at least mung (moog) and masur.
