Great for a first time. Not great if you've been there more than 3 times within a span of 2 years.
Place is too commercial and plastic-y. Personally if its scenic beauty you want you're better off going camping to some national park. In Niagara Falls... Casino and Umm... bars, pubs and clubs that serve to 19 year old upstate New Yorkers (if you're into that).
But theres always a good time for the family: For the kids plenty of cheap thrills and horror houses, and there's Marineland. Its not too bad driving around the peninsula and the escarpment: there's Niagara Wine region with the vineyards, and the two great lakes on either side.

Since you'll be coming from south of the border, I suggest you not to go to any casinos and all those. Those are better south of the border. Your main aim should be to spend time near the falls as much as possible. Go on a day when you can actually take the ferry into the falls. I've never been to the ferry, but I heard it's the best thing you can do when you go to Niagara.
As Ammark said, don't go there if you've been there more than thrice in 2 years. The falls is good. Don't rely on food in the falls tourist area. There's a Popeyes restaurant near the falls, and it's Halal (if that's important for you). Otherwise, there're quite good restaurants around...just not in the tourist center.
If you wish to spend some time beyond Niagara, I suggest you should visit Niagara on the Lake. It's a small town next to Niagara, and it's worth a trip. Beautiful small little town.
What else. Emm, if you've got 3/4 hours of extra time, come to Toronto and see the CN tower! I guess?

If you're going at night, cross the border to get the Canadian's view. The lighting looks pretty neat. Don't miss the fireworks at night (Thursdays or Fridays, don't quite remember).

If you want to see all the stuff in USA side, you may consider taking the tour which is also very cost effective and easy, unless only think you care is Maid of the Mist. I went there atleast 10 times for different reasons.
And yes, at night the view from Canada is excellent. There are lots of activities for kids and adults in Canada side. Also better choice of hotels. Plus if you have time, to that revolving restautant in Canada Side (I can't remember the name). There is a cable ride in Canada (not that far) which was fun.
In USA side, if you are interested, you may consider to visit the The (Hydrolic) Power Station. I don't know whether they still allow you to go there.
I fealt in Canada side its more comercialized versus in USA side its more natural touch.
And don't forget to have the local Buffalo Wings and Logenberry drink.

Never crossed but been there from both sides. The Canadian side gives you a better view. If family is involved and you are traveling by car/van then take your lunch/dinner and have a picnic on US side. People use to take BBQ materials over there and enjoy the nature.
I met a girl over there once...

Our exchange of PM often said you are over the word count limit. lol.
Anyways, At Niagara, I suggest at least stay one night. The lighting from the Canadian side at night is breathe taking.
As for Grand Canyon, that would only remind you how powerful the Almighty is. Two different type of scenaries. Both amazing to watch and can't have enough of it.

Pundit - your options will vary greatly on the answer to the following question:
Are you and your guests/fellow visitors able to cross the US border w/o any issues?
If so, lots of options open up. If not, the US side is somewhat boring but I can give you some suggestions depending on your party mix (i.e. polapine vs. buirapine).

Pundit:
I ended up going Niagara Falls today on a short notice. Found out that the garden outside the Tourist Center is being renovated. That garden is a great attraction in summer. If you go there, try to go some time after the 20th of May. I think they'll have it ready before the May 21st long weekend.
A few things I noticed today. Try to go to the Cliffton Hill in Niagara. They have day passes that will take you into the attractions throughout that area. But if you pick and choose where you want to go, that's another possibility. Parking cost is kinda high in there.

Also if you have more than one day to spend, try the Finger lakes wine tours with a visit to Watkins Glenn water falls. Its an hour drive into the Finger lakes region, but it is really worth it. The Gorge trail there is very beautiful which winds up the mountain with the falls. 3rd weekend of may is ideal time since thats when they open the trails. There are couple of other beautiful water falls too along the finger lakes region. As such, the drive in and out itself is a beauty with the wineries on the sides and breathtaking lake views. If you have another day to spend, try Letchworth state park also. damn, i can keep adding abt this region, such is the natural beauty here.
cheers !
